2023 St Huberts Cellar Reserve Cabernet Sauvignon

St Hubert’s has an extended history with Cabernet Sauvignon, with the variety long being the flagship for the brand. Our Cellar Reserve represents the finest parcels from the vintage. A mix of fermentation in open pots (pressed early) and closed static (with extended maceration) provide blending options with different aromatics and tannin profiles. Our aim is to produce a wine true to the regional style while highlighting Cabernet Sauvignon's varietal characters.
Matured for 12 months: 100% French oak barriques, with around 12% new.
Nose - The wine displays classic varietal Cabernet aromas with vibrant cassis, blue and briary fruits. Regional leafy notes are in there with earth and dark chocolate. Cedary oak
supports the wine.
Palate - The palate is medium bodied, even, and balanced. Moderate density with lovely proportion. Light powdery tannins from the fruit and oak frame the wine. A long black cherry and cocoa powder finish.
Drink now to enjoy vibrant varietal flavours, or allow depth and complexity to grow over the next ten years or so.
