Well, it has been a few years between drinks…. First made in 2012, fruit was originally sourced from John Denton’s property (until he ripped them out in 2017). Now from Justin Fahey’s vineyard. The grapes were handpicked as ripe as we could practically get them, this parcel usually being one of the last to hit the winery. After crushing, (and hours of maceration) the grapes are pressed hard, the juice was fermented in stainless steel and arrested a mid-way resulting in a sweet wine.

Terrific as an aperitif or dessert wine, we aim to make a style that is rich and fruity, without being overly sweet and cloying.

Maturation: Mainly fermented and matured for 3 months in stainless steel. A small portion (8%) from the 2022 vintage, matured in old French oak for 13 months. 

Nose: Classic Viognier varietal notes of dried apricots and poached peaches jump out of the glass. Underneath there are hints of beeswax, ripe bananas, and orange blossom.

"The palate is sweet (rather than luscious) balanced by acidity and alcohol. Flavours of stone fruit logically follow from the nose, along with lifted floral esters. The wine culminates with textured tannins and a lingering dried apricot finish."
